09 - 1 pound potato gnocchi, fresh or shelf-stable

10 - 2 tablespoons olive oil
11 - ¼ cup chicken broth or water
12 - 2 tablespoons freshly grated Parmesan cheese, plus extra for serving (optional)
# How-To Steps:
01 - Bring a large pot of salted water to a boil. Cook the gnocchi according to package directions until they float, approximately 2 to 3 minutes. Drain and set aside.
02 - In a large skillet over medium-high heat, heat 1 tablespoon olive oil. Toss the chicken pieces with Cajun seasoning, salt, and black pepper.
03 - Add the seasoned chicken to the skillet and sauté for 4 to 5 minutes, turning occasionally, until golden brown and cooked through. Transfer to a plate and cover loosely with foil.
04 - Add the remaining tablespoon of olive oil to the same skillet. Sauté the red onion and bell pepper for 2 to 3 minutes until slightly softened.
05 - Stir in the minced garlic and cook for 30 seconds, stirring constantly to prevent burning.
06 - Return the cooked gnocchi and chicken to the skillet. Pour in the chicken broth and add the spinach. Stir gently to combine and cook until the spinach wilts, about 1 to 2 minutes.
07 - Sprinkle with Parmesan cheese, toss well, and adjust seasoning to taste. Serve immediately with additional Parmesan if desired.
