- Potatoes & Ham: 3 lbs (1.4 kg) russet potatoes, peeled and thinly sliced, 3 cups (400 g) cooked ham, diced
- Sauce: 6 tbsp (85 g) unsalted butter, 1 large yellow onion, finely chopped, 4 cloves garlic, minced, 1/3 cup (40 g) all-purpose flour, 3 cups (720 ml) whole milk, 1 cup (240 ml) heavy cream, 2 tsp Dijon mustard, 1 tsp kosher salt, 1/2 tsp black pepper, 1/2 tsp paprika, 2 cups (200 g) sharp cheddar cheese, shredded, 1 cup (100 g) Gruyère cheese, shredded
- Topping: 1 cup (100 g) shredded cheddar cheese, 1/2 cup (50 g) panko breadcrumbs (optional), 2 tbsp unsalted butter, melted (for panko)
Instructions
- Step 1:
- Preheat oven to 375°F (190°C). Grease a deep 9x13-inch (23x33 cm) baking dish.
- Step 2:
- In a large skillet over medium heat, melt butter. Add onion and sauté 4-5 minutes until softened. Add garlic and cook 1 minute more.
- Step 3:
- Stir in flour and cook, whisking constantly, for 1-2 minutes until lightly golden.
- Step 4:
- Gradually whisk in milk and cream. Add mustard, salt, pepper, and paprika. Continue whisking until smooth and thickened, about 5 minutes.
- Step 5:
- Remove from heat. Stir in cheddar and Gruyère cheeses until melted and the sauce is smooth.
- Step 6:
- Spread half the potatoes in the prepared dish. Top with half the ham, then pour over half the sauce. Repeat layers with remaining potatoes, ham, and sauce.
- Step 7:
- Sprinkle with extra cheddar. If using, toss panko with melted butter and sprinkle over the top.
- Step 8:
- Cover dish with foil and bake for 50 minutes. Remove foil and bake an additional 20 25 minutes, or until potatoes are tender and top is golden and bubbly.
- Step 9:
- Let rest 10 15 minutes before serving.
