  • Pasta: 350 g fusilli pasta

Instructions

Step 1:
Bring a large pot of salted water to a boil. Cook the fusilli according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
Step 2:
While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the diced bacon and cook until crisp, about 4&5 minutes. Remove bacon with a slotted spoon and set aside, leaving the fat in the pan.
Step 3:
Add the sliced onions to the skillet and sauté for 3&4 minutes until softened. Add the mushrooms and cook for another 5&6 minutes, stirring occasionally, until golden and tender.
Step 4:
Stir in the minced garlic and cook for 1 minute until fragrant.
Step 5:
Return the cooked bacon to the skillet. Add the drained fusilli, butter, and half of the Parmesan cheese. Toss everything together, adding a bit of reserved pasta water to create a silky sauce.
Step 6:
Season with salt and pepper to taste. Stir in the chopped parsley.
Step 7:
Serve immediately, garnished with extra Parmesan and parsley if desired.
