- 1/4 cup (15 g) chopped fresh cilantro or parsley: for garnish

- 1 1/2 tsp ground cinnamon:
- 1 tsp ground turmeric:
- 1/2 tsp ground allspice:

- 1 bay leaf:

Instructions
- Step 1:
- Set the Instant Pot to Sauté. Add olive oil and, when hot, brown the lamb cubes in batches. Remove and set aside.

- Step 3:
- Stir in cumin, coriander, cinnamon, turmeric, allspice, smoked paprika, and cayenne. Cook for 1 minute until fragrant.
- Step 4:
- Add carrots, potatoes, bell pepper, and tomato paste. Stir well.
- Step 5:
- Return browned lamb to the pot. Add diced tomatoes, broth, bay leaf, salt, and pepper. If using, add apricots and chickpeas.
- Step 6:
- Secure the Instant Pot lid. Set to Pressure Cook or Manual on high for 30 minutes.
- Step 7:
- Allow natural pressure release for 10 minutes, then quick-release any remaining pressure.
- Step 8:
- Discard bay leaf. Stir, taste, and adjust seasoning if needed.
